Uboats frequently went far below periscop depth to evade capture. Periscope was used for attack and to get bearings.

: The Uboat in Raiders was the same one from Das Boot as well. IT is one of the few surviving Uboats from the war. I believe (not sure) that it is available to be toured somewhere in Europe. Lucas heard that it was avaiable for shooting and wrote it into the script. The script originally called for a merchant ship or destroyer of some kind

I was my understanding the Uboat from Das Boot was a mockup, not a real war survivor. The one thing that Lucas and Spielberg were very worried about was the rough seas they experienced just prior to shooting the ship/sub scene, as they were afraid after towing the mockup out to the "set" that the model would be swamped from the waves and sink. They literally sweat bullets until they got the shot, they were so worried they would lose the loaned item. They still had a fairly rough sea for the shoot, even though, according to the "Making of Raiders" paperback book, it had calmed down considerably from the day before. Regards. Michaelson
