Tough call but three that spring to mind are:

1. The opening sequence of Raiders (jungle/temple/escape with Jock)
2. The booby traps in Last Crusade (when I first saw it in theatres, I thought the "leap from the lion's mouth" was just about the coolest thing I had ever seen.)
3. The tank battle from Last Crusade (the truck chase in Raiders is a classic but this sequence is pretty spectacular in its own right.)

It's hard to choose! How about people's three favorite lines of dialogue from the movies?
