I think the fact than harrison ford had a touch of "dehli belly" on the day of shooting and hence the "just shoot the guy" thing, must have seemed much funnier to the people on location than anything that had been story boarded for that scene. this was the lucas touch that makes the whole movie seem so fast and fluid, "lets just film the thing as quickly as we can" with very few retakes, e.g. the extended comedy Sallah scene with the germans on lunch which was cut when doug slocombe says there was too little light in the shot (as seen in the making of raiders)
in the shots previous to the market place swordsman scene check out the locals who obviously have been told to "just walk back and forth" as thats exactly what there're doing!!
