Well, as George Lucas originally envisioned him, Indy *was* a hard drinker. He was a hard-drinking professor-by-day-playboy-by-night type, a boozer and a womanizer. Spielberg didn't like that aspect, and decided to play it down. What they agreed on was a compromise: George feels that that side of Indy is still there, but it's not really portrayed on screen. (I may have George and Steven's positions reversed; it's been a while since I read this.) This information is from either a 1984 biography of Harrison Ford or else "The Making of Raiders of the Lost Ark." I believe it's the former.
