I recommend putting some water on the collar and then shaping it by hand, putting the fold in the proper place. When it dries, it will tend to retain this shape. I have a hide Crusade jacket and this has worked decently for me. With the thinner skin jackets, though, I'm not sure.

: I've seen a few posts concerning how the collar of the LC jacket does not lay properly. Here's a thought. Ever notice how expensive dress shirts have a thin, flexible plastic insert in the collar to prevent them from curling up and laying unevenly? Since all collars are two ply I'm sure a local tailor would have no trouble pulling out the stitches and doing something similar. Since lambskin is very thin I'm sure it would work in much the same way. Just a thought...
