Both cow and horse can be had in a wide range of thickness' depending on what part of the animal you are using. I am sure the original A-2 jackets varied depending on manufacture and what leather they had available. The A2 is so popular that original manufactures specifications are probably listed on some WW2 site.
As for Carhartt, try the newer denier Cordura/nylon extremes wear. It is reported to be extremely durable and you can still wash it. I have never though about wearing a heavy leather jacket for serious outdoor work. While durable, it must get a little nasty after a couple of outings. I have always been turn off by Filson Tin Cloth for the same reason. How do you care for your jacket??
