There is a lot of archaeology going on all the time, in every state in the union, so there are ample opportunities to get involved. I would advise volunteering on an excavation -- taking a course would be much harder to arrange, and not nearly as fun --
You might contact your State Historic Preservation Office -- they are in charge of reviewing archaeological work, giving permits, etc. In New Jersey, it's:

You might try them, and ask if they know of any fieldwork happening this summer that might accept volunteers (not all will, for a variety of reasons). You may also try local universities -- I know Rutgers University does a lot of work --
You might also try typing 'archaeological fieldwork' into a search engine -- I know there is a website devoted to fieldwork opportunities --
