You're close, sir. It is an aviation term. Six o'clock is directly behind the plane (twelve o'clock is directly in front; consult the plane chase in LC :-)). "Check six" simply means "Watch your butt" or even more politely, "Take care of yourself." It's generally used when Pilot 1 is warning Pilot 2 of a bogey more or less behind him. So it's kind of a way of saying "Be careful", but any of the aforementioned things I said will fit. When I use it to end my posts, I mean "Take care of yourselves".
