When the fight starts, the chicken vendor drops one of the two real dead chickens he is holding and another guy grabs it and runs like he's recovered a fumbled football. I guess he's stealing it but the chicken vendor just looks at him. It seems the theif moves to the back of the crowd and waves his chicken in the air. The sqatting chicken shows up in the same pace the chicken vendor dropped the first one, but it's head is propped up! It's only there for a couple frames and disappears into thin air.
