I think it's a combonation of factors that you mentioned. First being more formal, and second since Indy "left just when he was getting interesting", I don't think Sallah ever had the opportunity to meet Henry Sr. Also, if Henry and Indy were on non-speaking terms, I don't think Indy would've brought his father up in conversations with Sallah.
And it may also be the fact that Henry Sr. wasn't even a concept before Last Crusade. ;)
