Here are mine:

Raiders: The maproom scene (the music, the building suspense... I love it!)
Temple of Doom: The freeing of the slave children, right after Indy says: "Right. All of us."
Last Crusade: I agree with our friend Brett (Yasim). The tank scene takes the cake as the best. The music, again; the constant action, all the way to the end.
