Check out 'The Complete Idiots Guide to Lost Civilisations'. I love this book and I'm proud to admit it. Covers everything in a really easy to understand way - the only archaeology book I've actually read cover-to-cover.

If you're after something a bit more weighty, then THE archaeology textbook is 'Archaeology: Theories, Methods and Practice' by Paul Bahn and Colin Renfrew. Now in it's third edition.

Also try 'The Practical Archaeologist: How We Know What We Know About The Past'.

All good general books.
